Ingredients

  • 3 slc bacon
  • 1/3 c. minced green bell pepper
  • 1 stalk celery -- minced
  • 1 sm onion -- sliced
  • 1 tsp salt
  • 1 dsh pepper
  • 1 c. coarsely minced tomatoes
  • 1 x 10 ounce. pkg. frzn cut okra
  • 1 x 7 ounce. can whole kernel corn - liquid removed

Directions

  1. In medium skillet, fry bacon till crisp. Drain on paper towel; reserve drippings. Crumble bacon; set aside. To reserved bacon drippings, add in green bell pepper, celery, and onion. Saute/fry till tender. Add in remaining ingredients; mix well. Cover; simmer 10 to 15 min or possibly till okra is tender, stirring occasionally. Sprinkle with crumbled bacon.
  2. TIP: One 16-oz can cut okra, liquid removed, and one 8-oz can stewed tomatoes can be substituted for frzn okra and tomatoes.
