%3C/p%3E%3Cp%3EIn%20reading%20a%20recent%20issue%20of%20a%20popular%20food%20magazine,%20I%20was%20drawn%20to%20a%20photo%20and%20recipe%20for%20tortilla%20soup;%20it%20was%20gorgeous%20and%20looked%20delicious.%20Then%20I%20read%20the%20headnote.%20What%20made%20this%20one%20noteworthy,%20in%20the%20magazine's%20view,%20was%20the%20chef's%20secret%20substitution:%20instead%20of%20tortillas,%20he%20used%20butter.%20An%20assload%20of%20butter.%20I%20think%20it%20was%20an%20entire%20stick.%3C/p%3E%3Cp%3EWhat%20the%20...%20?%20Wouldn't%20that%20then%20be%20BUTTER%20SOUP?%3C/p%3E%3Cp%3EI%20don't%20know%20about%20you,%20but%20when%20I%20want%20a%20little%20crunch%20alongside%20my%20sandwich%20at%20lunchtime%20or%20a%20vehicle%20to%20scoop%20up%20some%20yummy%20guacamole,%20I%20DON'T%20GRAB%20A%20STICK%20OF%20BUTTER.%3C/p%3E%3Cp%3ECall%20me%20crazy.%3C/p%3E%3Cp%3ENeedless%20to%20say,%20I%20didn't%20make%20that%20recipe.%20But%20it%20did%20prompt%20me%20to%20explore%20some%20other%20non-buttery,%20might-actually-contain-tortillas%20tortilla%20soup%20recipes.%20What%20I%20found%20led%20to%20me%20believe%20that%20this%20was%20a%20perfect%20candidate%20for%20the%20slow%20cooker.%3C/p%3E%3Cp%3ENot%20only%20that%20but,%20without%20adding%20the%20freakin'%20stick%20of%20butter,%20the%20soup%20is%20on%20the%20healthy%20end%20of%20the%20food%20spectrum,%20particularly%20if%20you%20make%20your%20own%20tortilla%20strips,%20rather%20than%20using%20the%20processed%20kind%20from%20a%20bag.%3C/p%3E%3Cp%3ESo%20put%20down%20that%20stick%20of%20butter%20and%20fire%20up%20the%20crockpot:%20soup's%20on.%3C/p%3E%3Cp%3ESlow%20Cooker%20Tortilla%20Soup%3C/p%3E%3Cp%3EAs%20written,%20this%20recipe%20makes%20enough%20soup%20for%20about%204-5%20people%20(or%20two,%20with%20leftovers).%20Feel%20free%20to%20double%20it;%20no%20need%20to%20adjust%20the%20cook%20time.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPut%20all%20the%20ingredients%20EXCEPT%20the%20tortillas,%20olive%20oil,%20cheese%20and%20cilantro%20in%20a%20slow%20cooker%20and%20stir.%20Cover%20and%20cook%20on%20low%20for%20about%207-8%20hours.%20(You%20know%20this%20is%20my%20favorite%20instruction%20to%20type!!)%3C/p%3E%3Cp%3EJust%20before%20the%20soup%20is%20finished,%20preheat%20the%20oven%20to%20400%20degrees.%20Place%20tortillas%20on%20a%20parchment-lined%20baking%20sheet.%20Using%20a%20brush%20or%20oil%20sprayer,%20barely%20coat%20each%20side%20of%20the%20tortillas%20with%20a%20little%20bit%20of%20olive%20oil.%20Bake%20for%20about%2020%20minutes%20(turning%20them%20over%20once,%20if%20you%20remember)%20or%20until%20crisped.%20Break%20into%20pieces.%20Top%20each%20serving%20of%20soup%20with%20some%20tortilla%20%22chips%22,%20cilantro%20and%20cheese.%3C/p%3E){kind=link}
