Ingredients

  • 12oz (360gr) shrimp, cleaned
  • 1 medium leek, trimmed and sliced
  • 1/2 red pepper, chopped
  • 1 lemon, juiced – 4 tbs juice, divided
  • 2 tbs capers
  • 15 Greek dry-cured olives, roughly chopped
  • 3oz (90gr) feta cheese, crumbled
  • 3 tbs fresh parsley, chopped
  • 1/2 tsp paprika
  • 3 tbs good olive oil, divided
  • 1/2 cup (4.5oz, 130gr) orzo
