Ingredients

  • 6 ounce (about 1 C.) diced cooked shrimp
  • 1 c. Shredded lo-fat mozzarella cheese
  • 3/4 c. Minced plum tomatoes, (about 2 med.)
  • 3/4 c. Minced fresh spinach
  • 1/4 c. Minced scallions
  • 1 tsp Crushed fresh garlic
  • 1 tsp Dry oregano
  • 1 x Long, thin loaf French bread,about 24x2x1 in.

Directions

  1. Combine shrimp, cheese, tomatoes, spinach, scallions, garlic and oregano in a medium bowl, stir to mix well and set aside. Slice the bread into 48 (1/2 in.) slices. Arrange slices on a baking sheet and bake at 300 for 12-15 minutes. or possibly til crisp and dry. Spread each slice with 1 Tablespoons of the shrimp mix. Increase the oven temp. to 400 and return the appetizers to the oven for 5 minutes., or possibly just til the cheese is melted. Arrange on a serving platter and serve warm.
