Seitan and Mushroom Stir-Fry Recipe

Seitan is a great substitute for meat. If you're looking for a "Meatless Monday" meal or if you're a vegetarian or vegan, this dish is sure to please.

  • 1 pkg. (8 oz.) Westsoy seitan
  • 1/2 cup hot water
  • 2 Tbsp. reduced sodium soy sauce
  • 2 tsp. cornstarch
  • 1 vegetarian bouillon cube
  • 2 to 3 Tbsp. extra virgin olive oil
  • 1 cup (5) green onions sliced with some green
  • 1 red bell pepper cut into thin strips
  • 1 clove of garlic, minced
  • 1 1/2 cups sliced fresh mushrooms
  • 1 can sliced water chestnuts, drained
  • 8 to 12 oz. of fresh snow peas
  • 2 cups of cooked brown rice

Directions

  1. Cut the seitan into strips or medalions.
  2. Heat 1 Tbsp. of oil in a large skillet or wok.
  3. Add onions, garlic and bell pepper and stir-fry about 2 to 3 minutes on medium high heat. Remove from skillet and set aside.
  4. Add mushrooms, water chestnuts and snow peas. Stir-fry for 4 to 5 minutes. Remove and set aside.
  5. Add the remaining oil. Add the seitan and stir-fry for about 2 to 3 minutes.
  6. Add the soy sauce mixture and cook until heated through (about 3 to 5 minutes).
  7. Return veggies to the skillet. Toss gently with the seitan and allow to cook, covered, for another 2 to 4 minutes or until heated through.
  8. Serve immediately over brown rice.

    This looks really good and of course healthy. The Westoy seitan is pretty tasty. Have you tried making seitan from scratch with whole wheat flour? Mine never tastes like the store bought product even when making it from the Vital Wheat gluten. Too rubbery.
