Roasted Acorn Squash Recipe

A delicious and nutritious side dish that goes great with almost anything. It's sweet so kids will enjoy it too :)

  • Ingredients:
  • Acorn squash
  • ½ tsp of un-salted butter
  • ½ tsp of brown sugar
  • (Optional - sprinkle agave nectar on top either in place of the brown sugar to make it healthier or a mixture of both.)

Directions

  1. 1. Preheat oven to 400 degrees
  2. 2. Cut squash in half and gut out its innards.
  3. 3. Poke holes throughout the inside of each half, this will allow the butter and brown sugar to seep in and develop more flavor.
  4. 4. Put the butter and brown sugar in the cavity of the squash.
  5. 5. Put the squash in the oven (can do in a dish, on a cookie sheet or right on the rack) and reduce the heat to 350 degrees.
  6. 6. Bake for 30 minutes, occasionally basting the inside of squash with the butter/sugar mixture.
  7. 7. Let cool then either serve as is or you can fill it with something (i.e a quinoa mixture, brown rice, etc.) or you can dig (or peel) it out of its outer shell and serve it chopped or mashed.
