Ingredients
- 2 cups plus 2 tablespoons half and half
- 1 cup heavy cream
- 1/2 granulated sugar
- 4 large egg yolks
- 1 tablespoon cornstarch
- 1/2 cup canned sweetened red bean paste*
- 1 cup cooked whole red beans (aka adzuki beans)** or 1 cup canned red beans (adzuki beans), drained and rinsed

%20I%20had%20a%20recipe%20for%20red%20bean%20ice%20cream%20in%20hand%20and%20was%20just%20a%20few%20hours%20%20away%20from%20experiencing%20red%20bean%20ice%20cream%20in%20my%20home.%20%20Oh,%20the%20excitement!%3C/p%3E%3Cp%3EThe%20recipe%20I%20found%20on%20the%20CHOW.com%20called%20for%202%20cups%20of%20red%20bean%20paste%20to%20give%20the%20red%20bean%20flavor.%20%20One%20of%20my%20favorite%20things%20about%20red%20bean%20ice%20cream%20is%20the%20bits%20of%20whole%20red%20beans%20found%20throughout%20it.%20%20To%20me%20those%20bits%20of%20chewy%20goodness%20in%20the%20midst%20of%20all%20that%20cold%20creamy%20ice%20cream%20are%20what%20makes%20it%20so%20yummy%20to%20eat.%20%20To%20put%20it%20simply,%20imagine%20Cookies%20n%E2%80%99%20Cream%20without%20those%20hunks%20of%20Oreo%20cookie.%20%20I%20know%20-%20%20the%20thought%20is%20painful%20to%20even%20imagine.%20%20Which%20is%20exactly%20why%20I%20am%20adamant%20about%20using%20whole%20red%20beans%20in%20my%20recipe.%20%20If%20you%20can%E2%80%99t%20find%20canned%20whole%20red%20beans,%20cooking%20the%20dried%20beans%20will%20require%20some%20effort%20on%20your%20part%20(see%20the%20recipe%20for%20more%20details).%20%20%20I%20realize%20this%20is%20asking%20a%20lot,%20but%20all%20I%20can%20say%20is%20that%20as%20you%20happily%20chew%20on%20bits%20of%20red%20bean%20you%E2%80%99ll%20be%20glad%20you%20took%20the%20time.%3C/p%3E%3Cp%3EMakes%201%20quart%3C/p%3E%3Cp%3EAdapted%20from%20Essentials%20of%20Asian%20Cuisine:%20Fundamentals%20and%20Favorite%20Recipes%20by%20Corrine%20Trang%20as%20featured%20on%20Chow.com%3C/p%3E%3Cp%3EAdzuki%20beans%20are%20referred%20to%20as%20red%20beans%20in%20Asian%20cuisine%20and%20are%20identified%20as%20such%20in%20Asian%20markets.%20%20Do%20not%20substitute%20kidney%20beans%20(what%20I%20think%20of%20as%20red%20beans)%20for%20the%20adzuki%20beans.%20%20While%20it%20won%E2%80%99t%20be%20the%20same,%20you%20can%20use%201%201/2%20cups%20of%20sweetened%20red%20bean%20paste%20and%20omit%20the%20whole%20red%20beans%20if%20you%20are%20pressed%20for%20time.%3C/p%3E%3Cp%3EFill%20the%20bottom%20half%20of%20a%20double%20boiler%20with%20about%201%20to%202%20inches%20of%20water%20and%20bring%20to%20a%20boil.%20%20Meanwhile,%20pour%20the%202%20cups%20of%20half%20and%20half%20and%20the%201%20cup%20of%20heavy%20cream%20into%20the%20top%20of%20the%20double%20boiler%20and%20heat%20until%20steaming,%20but%20not%20boiling.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20together%20the%20egg%20yolks%20and%20the%20sugar%20until%20the%20eggs%20are%20thick%20and%20light%20yellow%20in%20color.%20%20Add%20a%20ladleful%20of%20the%20hot%20cream%20into%20the%20eggs%20and%20whisk%20to%20temper.%20%20Pour%20the%20egg%20and%20cream%20mixture%20into%20the%20top%20of%20the%20double%20boiler%20and%20whisk%20to%20combine.%3C/p%3E%3Cp%3EMix%20together%20the%20remaining%20two%20tablespoons%20of%20half%20and%20half%20and%20the%20cornstarch%20and%20add%20the%20mixture%20to%20the%20cream.%20%20Continue%20whisking%20and%20heating%20the%20mixture%20until%20it%20thickens%20and%20coats%20the%20back%20of%20a%20spoon.%20%20Do%20not%20let%20the%20mixture%20boil.%3C/p%3E%3Cp%3EOnce%20thick,%20remove%20the%20custard%20from%20the%20heat%20and%20strain%20it%20into%20a%20bowl%20that%20has%20been%20placed%20in%20an%20ice%20bath.%20%20Stir%20in%20the%20red%20bean%20paste%20and%20the%20whole%20red%20beans%20and%20chill%20for%20at%20least%204%20hours%20in%20the%20refrigerator.%3C/p%3E%3Cp%3EFollowing%20the%20instructions%20for%20your%20ice%20cream%20maker,%20pour%20the%20chilled%20custard%20into%20the%20machine%20and%20process%20until%20thick%20and%20frozen.%3C/p%3E%3Cp%3E*%20%20Canned%20sweetened%20red%20bean%20paste%20can%20be%20found%20at%20Asian%20markets%20and%20some%20grocery%20stores.%3C/p%3E%3Cp%3E**%20If%20using%20dried%20adzuki%20beans,%20soak%203/4%20cup%20of%20dried%20beans%20in%20water%20overnight%20in%20a%20refrigerator.%20%20After%20soaking,%20place%20beans%20in%20a%20medium%20saucepan%20and%20cover%20with%202-inches%20of%20water.%20%20Bring%20to%20a%20boil%20then%20reduce%20the%20heat%20and%20simmer%20for%202%20hours%20or%20until%20the%20beans%20are%20soft.%20%20Drain%20and%20use%20as%20directed%20in%20the%20recipe.%3C/p%3E){kind=link}
