  1. Wipe quinces well Core, but don't peel.
  2. Peel and put through the mincer the pineapple, also the quinces.
  3. Have a basin underneath to catch the juice.
  4. Meanwhile put on to boil the pint of water and the sugar.
  5. Boil hard for 10 min, then put in the chopped fruit and continue boiling for 30 - 45 min, when it should be right thickness and a lovely golden brown colour.
