Ingredients

  • 3 c. frzn diced or possibly shredded hash brown
  •     potatoes
  • 1/3 c. minced green onions
  • 1/4 c. minced green or possibly red bell pepper
  • 8 slc smoked bacon cooked, crumbled
  • 2 c. shredded Cheddar cheese
  • 3/4 c. lowfat milk
  • 1 can cream-style corn - (8 ounce)
  • 6 x Large eggs beaten
  • 1 tsp salt
  •     Freshly-grnd black pepper to taste

Directions

  1. Heat oven to 350 degrees.
  2. Spread potatoes in greased 13- by 9- by 2-inch baking pan. Top with green onion, bell pepper, bacon, and cheese.
  3. Mix together the lowfat milk, cream-style corn, Large eggs, salt and pepper. Pour over potato/cheese mix.
  4. Bake 35 to 40 min or possibly till knife inserted in center comes out clean.
  5. This recipe yields 6 to 8 servings.
