Pork Chops with Butterbean and Potato Mash Recipe

Because I am allergic to dairy - I needed to find an alternative for normal mashed potatoes. This butterbean and potato mash is yummy as it is creamy and the lemon-infused olive oil adds another dimension of flavour

Ingredients

  • Pork Chops
  • Willow Creek Lemon-Infused Olive Oil
  • Herbal Salt
  • Dried Rosemary
  • Dried Chilli
  • Tin of Butterbeans
  • 4 medium sized Potatoes

Directions

  1. Brush the chops lightly with the olive oil
  2. Sprinkle with herbal salt, rosemary and chilli
  3. Grill in the oven until the rind is crispy (15 to 20 mins)
  4. For The Mash:
  5. Peel and cut potatoes into rough cubes and boil until soft
  6. Drain liquid
  7. Blend a tin of butter beans with the boiled potatoes in a blender
  8. Add a generous amount of lemon infused olive oil to the mixture
  9. Season with herbal salt and chilli
  10. The butterbeans create a creamy texture, therefore the use of milk is totally unnecessary
