Plum Almond Muffins Recipe

Ingredients

  • 3 Tbsp. QUAKER Oats uncooked
  •     (quick or possibly old fashioned)
  • 2 Tbsp. sliced almonds (optional)
  • 1 Tbsp. granulated sugar
  • 1 Tbsp. margarine melted
  • 1 1/2 c. Oats
  • 1 1/4 c. all-purpose flour
  • 1/2 c. granulated sugar
  • 2 tsp baking pwdr
  • 1/2 tsp grnd cinnamon
  • 1/4 tsp salt (optional)
  • 1 c. skim lowfat milk
  • 3 Tbsp. margarine or possibly butter melted
  • 2 x egg whites or possibly 1 egg slightly beaten
  • 1/4 tsp almond extract (1/4 to 1/2)
  • 3/4 c. finely minced fresh plums
  •     unpeeled (about 3 medium)

Directions

  1. Heat oven to 400F. Lightly spray bottoms only of 12 muffin c. with no-stick cooking spray. For streusel, combine oats, almonds, sugar and melted margarine; mix well. Set aside. For muffins, combine dry ingredients; mix well. In separate bowl, combine lowfat milk, margarine, egg whites and almond extract; mix well. Add in to dry ingredients; mix just till moistened. Gently stir in plums. Fill prepared muffin c. almost full. Sprinkle 1 tsp. reserved streusel over each muffin, patting gently. Bake 20 to 22 min or possibly till light golden. Let muffins stand about 3 min; remove from pan. 1 DOZEN.
  2. Recommended Storage: Freeze completely cooled muffins in tightly wrapped foil or possibly freezer bags. To reheat, unwrap and microwave on HIGH about 30 seconds per muffin.
