Ingredients
- 1/2 c. white sugar
- 1 egg
- 1/4 c. butter
- 1 c. lowfat sour cream
- 1 teaspoon rum extract
- 1 1/2 c. flour
- 1 teaspoon baking pwdr
- 1/2 teaspoon soda
- 1/2 teaspoon salt
- 1 sm. can pineapple, crushed, liquid removed
- 1/2 c. coconut
Directions
- Beat sugar, egg, butter, lowfat sour cream, and rum flavoring till well blended. Add in dry ingredients. Stir till barely blended. Add in pineapple and coconut. 12 muffins, 375 degrees about 20 min.
