Ingredients

  • 1 c. shredded carrot
  • 3/4 c. green pepper
  • 3/4 c. minced tomato
  • 3/4 c. minced celery
  • 3 tbsp. minced onion
  • 3 tbsp. minced fresh parsley
  • 3 tbsp. minced dill pickle
  • 1/2 c. garlic-flavored lowfat sour cream dip
  • 1/3 c. mayonnaise
  • 1/4 teaspoon salt
  • 10 hard rolls
  • Leaf lettuce

Directions

  1. Combine first 7 ingredients tossing well. Combine dip, mayonnaise and salt and mix well. Fold into vegetable mix.
  2. Cut a hole in tops of rolls and scoop out centers leaving 1/2 inch shell. Line roll with lettuce leaf and spoon in mix. Wrap tight and chill.
