Ingredients

  • 1 c. Plain flour
  • 1/4 c. Puffed gram, (phutana or possibly dalia) flour
  • 1/2 Tbsp. Whole dalia
  • 5 x Green chillies crushed, (5 to 6)
  • 1/2 Tbsp. Coriander finely minced
  • 1 tsp Sesame seeds
  • 10 x Peanuts coarsely crushed, (10 to 12)
  • 1/2 tsp Red chilli pwdr
  •     Salt to taste
  • 2 Tbsp. Oil
  •     Oil to deep fry

Directions

  1. Mix all ingredients, except oil to deep fry.
  2. Add in very little water at a time, to make a pliable dough.
  3. Take 2 4"x4" squares of polythene (cut and use a clean lowfat milk bag).
  4. Grease one side of each.
  5. Take a pingpong ball-sized dough, shape into round.
  6. Place on one sheet, greased side up.
  7. Cover with other sheet, greased side down.
  8. Press with a flat surface, like the bottom of a heavy steel container.
  9. Pick up carefully and let into the warm oil.
  10. Repeat for more and fry a few at a time.
  11. Fry on low/medium heat. Until golden brown and crisp.
  12. Note: If the cracker is too hard, add in some oil to the dough.
  13. If it breaks in the oil, add in some riceflour and knead again.
  14. Making time: 30 min
  15. Makes: 10-12 nipattus
