My Favorite Everyday Chili Recipe

There's nothing like a hearty warm bowl of chili. My son loves chili and loves scooping it with tortilla chips. I know some people serve chili over rice or pasta but I am a chili purist. Just chili in the bowl and a nice piece of italian bread. Serve it how you like and top it with what ever you like.. shredded cheddar, sour cream chopped onions etc. You can also change up the beans to whatever kind you like. It's also great to use the leftovers to make chili omelets or top a baked potato.
If you dont want to use your own spices you could replace the chili powder, cumin, garlic powder and oregano w 2 packets of chili seasoning. I prefer my own so I can add more chili powder or cumin if needed.

Directions

  1. In a lg pot brown ground beef. As beef starts to cook add onion and green peppers, season lightly with salt and pepper.
  2. When veggies are softened add garlic and cook 1 min longer
  3. Add all tomaotes, beans and spices stir well and bring to a boil.
  4. Reduce heat, cover and simmer for up to an hour stirring occassionly. Taste test it and add more seasonings as needed.
  5. Turn off heat and let sit covered for 20-30 mins giving flavors time to marry.
  6. Serve with your favorite toppings.
