%3C/p%3E%3Cp%3EWith%20the%20help%20of%20a%20few%20Facebook%20friends%20and%20a%20Cousin,%20and%20a%20little%20trial%20and%20error,%20I%20have%20made%20a%20batch%20of%20%20what%20I%20think%20even%20Mom%20would%20have%20agreed%20are%20awesome%20Christmas%20Pickles%20that%20rival%20her%20own.%3C/p%3E%3Cp%3EI%20hope%20you%20enjoy%20them.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EThe%20recipe%20Mom%20used%20to%20make%20called%20for%20a%20jar%20of%20whole%20dill%20pickles%20and%20for%20you%20to%20slice%20them.%20%20I%20chose%20to%20go%20with%20the%20lazy%20route%20and%20use%20a%20jar%20of%20dill%20hamburger%20slices.%20%20Mom%20used%20to%20do%20this%20a%20lot%20in%20her%20later%20years.%3C/p%3E%3Cp%3EEmpty%20the%20liquid%20out%20into%20a%20cup%20and%20save.%3C/p%3E%3Cp%3ENext%20measure%20out%20one%20cup%20of%20sugar.%3C/p%3E%3Cp%3ENext%20peel%20and%20chop%20the%20onion.%20%20I%20used%20a%20food%20processor.%20%20You%20need%20approximately%201/2%20cup%20of%20minced%20onion.%3C/p%3E%3Cp%3EAdd%201/2%20cup%20of%20fresh%20minced%20onion%20to%20the%20pickle%20jar%20and%20then%20pour%20the%20sugar%20on%20top.%3C/p%3E%3Cp%3EAdd%20the%20teaspoon%20of%20Celery%20Seed%20on%20top.%3C/p%3E%3Cp%3EAdd%20the%20Horseradish.%3C/p%3E%3Cp%3EAdd%20the%20vinegar%20and%20as%20much%20of%20the%20pickle%20juice%20as%20you%20can%20fit%20in%20back%20to%20the%20jar.%20%20Shake%20well.%3C/p%3E%3Cp%3EThese%20will%20taste%20just%20awful%20if%20you%20try%20one%20now.%3C/p%3E%3Cp%3EShake%20vigorously%20several%20times%20a%20day%20and%20turn%20jar%20over%20once%20per%20day.%20%20These%20will%20be%20edible%20on%20the%204th%20day%20at%20a%20minimum.%20%20After%20a%20week%20they%20are%20irresistibly%20delicious!%3C/p%3E%3Cp%3EHere%20is%20a%20jar%20almost%20gone.%20Notice%20the%20sediment%20of%20celery%20seed%20and%20horseradish.%20%20That%20is%20what%20needs%20shaking%20and%20turning%20the%20jar%20over%20to%20keep%20it%20mixed%20and%20marinating%20uniformly.%20%20%20These%20are%20simple%20to%20make%20and%20extremely%20snackable.%20%20They%20are%20similar%20to%20a%20%22bread%20and%20butter%22%20pickle%20with%20a%20hard%20kick%20of%20horseradish%20at%20the%20end.%3C/p%3E%3Cp%3EThese%20remind%20me%20of%20home%20and%20of%20Mom,%20what%20a%20great%20comfort%20food!%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E){kind=link}
