  • 1 stk Unsalted butter
  • 1 c. Lowfat milk
  • 2 Tbsp. Sugar
  • 1 c. Flour
  • 1/2 tsp Baking pwdr
  • 1 pt Salt
  • 5 x Large eggs
  • 2 c. Bavarian cream (your favorite
  • 1/4 c. Cocoa pwdr
  • 1 c. Powdered sugar
  • 2 Tbsp. Lowfat milk - (to 3 tbspns)

Directions

  1. Preheat the oven to 350 degrees.
  2. In a saucepan, over high heat, whisk the butter and lowfat milk together, till all the butter has melted. Bring the liquid up to a boil. Whisk in the sugar. Combine the flour, baking pwdr and salt. Slowly stir in the flour mix and continue to stir till the mix forms a ball and pulls away from the sides of the pan. Remove from the heat and turn into the bowl of an electric mixer. Beat the dough on medium speeds and add in the Large eggs, one at a time. Continue beating till the dough holds together. Remove the dough from the mixer and cold.
  3. Place the dough in a pastry bag fitted with a round tip and pipe out logs, 2 inches long, onto a lined baking sheet, about 2 inches apart. Place the pan in the oven and bake for 10 min. Reduce the heat to 350 degrees and continue to cook for 25 min. Don't remove the sheet from the oven till they are hard to the touch. Cold the shells completely.
  4. Fill a pastry bag, fitted with a small round tip, with the pastry cream. Place the eclairs on a wire rack underlined with a baking sheet. Spoon some of the glaze over each eclair. Chill the eclairs till the glaze is set. Remove from the refrigerator and serve.
  5. For the chocolate glaze: In a small mixing bowl, combine the cocoa pwdr, powdered sugar and lowfat milk. Mix till smooth.
  6. This recipe yields 50 servings.
