  • 1 handf cilantro
  • 1 x lime, juice of
  • 2 x green onion, minced or possibly 1 chili, poblano, roasted, and, seeded or possibly 1 green pepper, roasted
  • 1 c. cooked rice White
  • 1 c. white cooked rice Red
  • 1/3 c. salsa
  • 2 Tbsp. tomato, paste
  • 1 c. cooked rice

Directions

  1. Combine the cilantro, lime juice and green onions or possibly pepper in a food processor and blend till smooth. Stir into the rice.
  2. Red:Combine the salsa and tomato paste in a food processor and blend till smooth. Stir into the rice.
  3. Presentation:Arrange the coloured rices side by side on the plate, to resemble the Mexican flag (horizontal stripes of red, white, green) - often served on Cinco de Mayo (the 5th of May), a celebration of the Mexican revolution
