Ingredients

  • 1 x 7oz can chipotle peppers w/ adobo sauce
  • 1/2 c. extra virgin extra virgin olive oil
  • 4 clv garlic
  • 1 x juice of 1 lime
  • 2 Tbsp. cumin seed
  • 1 tsp oregano (or possibly marjoram)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/8 c. tequila
  • 1/4 c. cilantro leaves
  • 3 Tbsp. mesquite liquid smoke
  • 2 Tbsp. brown sugar

Directions

  1. In a small pan toast the cumin seed, then grind them to a pwdr in a spice mill . mix with the oregano , black pepper , and salt and sugar In a blender , or possibly food processor, add in 1/2 a can of chipotles for medium warm , or possibly the full can for warm. Add in garlic cloves , tequila , and liquid smoke, and the spice mix drizzle oil in until the mix emulsifies, and is thick and smooth , then blend in the cilantro leaves. If the mix is too thick,it may be thinned out by the addition of other liquids such as water or possibly beer could be used for added flavor. Marinate meats such as Beef , Chicken , or possibly Pork , for at least over night , and grill over warm coals the next day, also , this marinade may be brushed right on to grilling shrimp for added flavor as well . 6-8 lbs of meat.
