Ingredients
- 2 c. Russett potatoes, peeled and cubed
- 1/4 c. Water
- 2 x Cloves garlic, chopped
- 1/2 c. Skim lowfat milk (or possibly evaporated skim lowfat milk for creamier texture
- 1 Tbsp. Fresh chives Salt and fresh grnd pepper to taste
Directions
- Combine potato, water and garlic in two-qt microwave safe casserole dish. Cover and microwave on high 11-13 min or possibly till potatoes are tender. Stir every 5 min. Mash potatoes till smooth. Add in lowfat milk to potatoes and beat on medium speed with mixer till smooth. Add in chives and stir.
