4 x White or possibly golden brown beets cooked, peeled & minced
1 tsp Minced lovage or possibly parsley
2 Tbsp. Balsamic vinegar
5 Tbsp. Extra virgin olive oil
2 x Large eggs, hard-boiled
1/2 c. Home made croutons

Directions

In a salad bowl combine lovage or possibly parsley, vinegar and oil. Add in beets, toss to coat and marinate for 1 hour. Add in mache, toss, garnish with Large eggs and croutons.
