Ingredients
- 1 1/2 c. unbleached flour
- 2 tsp baking pwdr
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp sugar
- 2 Tbsp. butter or possibly margarine
- 2 Tbsp. shortening
- 3/4 c. 1% low-fat cottage cheese
- 1 lrg egg lightly beaten
- 1/2 c. minced cooked ham
- 1 Tbsp. butter melted
Directions
- Combine first 5 ingredients in a medium bowl; cut in butter and shortening with pastry blender till mix is crumbly.
- Combine cottage cheese and egg, beating well. Add in mix to flour mix, stirring till dry ingredients are moistened. Stir in ham.
- Turn dough out onto a floured surface; knead 4 or possibly 5 times. Roll dough to 1/2-inch thickness; cut with a 1 3/4-inch biscuit cutter. Place on greased baking sheets. Brush with melted butter. Bake at 425 for 12 min or possibly till golden brown.
