Lemon Pomegranate Couscous Recipe

This was super easy and it was super delicious! I cheated too and made mine in the microwave.

Ingredients

  • about 1/2 c dried pomegranate seeds (you could use fresh if they're in season)
  • 7 ounces couscous
  • 9 ounces water
  • 1/4 c lemon juice
  • Several turns around the bowl of olive oil
  • handful of mint, chopped

Directions

  1. Mix the couscous, lemon juice, dried pomegranate, and olive oil in the a bowl.
  2. Microwave the water until boiling, about 5 minutes.
  3. Pour into the couscous, stir and cover tightly with plastic wrap. Allow to sit for 5 to 10 minutes until the couscous gets puffy.
  4. Stir in the mint.
