Ingredients
- 500 gm Premium Grade Beef Mince
- 1 lrg Onion, (finely minced)
- 1 x Carrot, (finely minced)
- Â Â Celery, (finely minced)
- Â Â Red Wine
- 1 Tbsp. tomato paste
- Â Â Beef stock
- Â Â Cardamom
- Â Â Coriander
- Â Â Chilli
- Â Â Cayenne Pepper
- Â Â Salt & Pepper
Directions
- Saute/fry mince till brown, add in onion, carrot and celery to the mince...and a mix of warm and sweet spices, such as cardamom, coriander, chilli and cayenne pepper. Mix well.
- To this add in some red wine to prevent spices from burning off. Then finish with a Tbsp. of tomato paste, salt and pepper to taste, and a splash of beef stock.
- You now have your spicy taco mince...to drop into a taco shell, with lettuce, tomato, lowfat sour cream, and topped with a rich grated cheddar cheese (mature cheese better for tacos)
