Ingredients

  • 6-ounces smoked chicken sausage*, chopped
  • 2 tablespoons olive oil, divided
  • 1 small yellow onion, finely chopped
  • 1 small carrot, peeled and finely chopped
  • 1 celery stalk, ends trimmed and finely chopped
  • 1 garlic clove, minced
  • 4 cups homemade or less-sodium store-bought chicken broth
  • 2 packed cups (about 6 ounces) thinly sliced (chiffonade) kale, stems removed
  • 1 small piece (1-2 inches) parmesan rind
  • 1 (15-1/2 ounce) can cannellini beans, rinsed and drained
  • Salt, to taste
  • Freshly ground black pepper, to taste
