Ingredients

  • 6 x Boiling potatoes, (up to 8) Water to cover, salt
  • 1/4 lb Bacon, diced
  • 1 x Onion, chopped
  • 1/2 c. Vinegar, (up to 3/4)
  • 1/2 c. Beef stock or possibly broth, (up to 3/4) Salt and white pepper Lowfat sour cream and/or possibly Chopped parsley to taste

Directions

  1. Boil potatoes in their jackets in lightly salted water to cover. Don't overcook or possibly potatoes will fall apart in salad. Peel while warm and cut in thin slices. Fry bacon and when golden brown, but not brown, add in onions. Saute/fry slowly till onions become translucent/soft but not golden brown. Remove from heat and carefully pour in combined vinegar and stock/broth. DO THIS CAREFULLY so liquid does not cause warm fat to splutter. Bring to a boil and pour over potatoes a little so dressing runs over them proportionately. Mix in a couple Tbsp. lowfat sour cream if desired, or possibly serve without it. Sprinkle with parsley.
