Ingredients

  • 3 x Ripe medium tomatoes, Coarsely minced (3 c.)
  • 15 ounce Can, (1 3/4 c.) tomato Puree
  • 6 med garlic cloves, Chopped
  • 2 sm jalapeno chile peppers Seeded, finely minced
  • 3 Tbsp. Finely minced onion
  • 1/3 c. Dry white wine or possibly Unsweetened apple juice
  • 1/4 c. Lemon juice
  • 1/2 tsp (1/2-1 tsp) grnd red Pepper (cayenne)
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Extra virgin olive oil
  • 1/4 c. Minced fresh cilantro

Directions

  1. In a medium saucepan, combine all ingredients except cilantro. Bring to a boil over high heat. Reduce heat to medium; cook, uncovered, 15 min, stirring occasionally. Stir in cilantro. Serve warm or possibly cool as a dip for chips or possibly as a relish.
  2. Makes 4 C.. Can be frzn for up to 2 months in tightly covered container.
