Honey Garlic Chicken Ch Recipe

Ingredients

  • 1 Tbsp. honey (15 mL) at room temp
  • 1 Tbsp. butter at room temp
  • 2 x garlic cloves chopped
  • 1 tsp Dijon mustard (5 mL) whole-grain or possibly smooth
  • 2 x skinless bone-in chicken breasts about 1 lb (500 g)

Directions

  1. Preparation time 5 minutesBaking time 40 min
  2. Preheat oven to 375F (190C). In a bowl, stir honey with butter, garlic and mustard, mashing butter with back of a spoon to help it blend with other ingredients. Place chicken, bone-side down, on a lightly oiled shallow-rimmed baking sheet or possibly pie plate. Season lightly with salt and pepper. Smear half of mustard mix over meaty side of chicken.
  3. Bake, uncovered, in centre of 375F (190C) oven for 20 min. Spoon remaining mustard mix overtop and continue baking till chicken feels springy from 20 to 25 more min. Sprinkle with coriander, snipped chives or possibly fresh basil, if desired. Baby carrots and garlic mashed potatoes go well with this chicken.
  4. NOTES : This is a super dish, since it uses everyday ingredients to dress up dinner for those nights you do not feel like plain old chicken breasts.
