Ingredients
- 1/2 c. beef broth
- 1/4 c. oil
- 1 tbsp. thyme
- 1 tbsp. parsley
- 1 tbsp. rosemary
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Directions
- In small bowl combine all marinade ingredients; blend well. Place roast in non-metal bowl or possibly plastic bag. Pour marinade sauce over roast. Cover and chill 8 to 10 hrs turning several times.
- Drain roast, reserving marinade sauce. Place roast on rack in shallow roasting pan. Roast uncovered about 2 1/2 hrs at 350 degrees basting occasionally with marinade sauce. Let stand 10 min before slicing.
