  • 2 Tbsp. lard
  • 1 x onion finely minced
  • 2 x leeks finely minced
  • 1 x Guinea hen cleaned, quartered Salt to taste Freshly-grnd black pepper to taste
  • 1/4 c. flour
  • 1 pt good-quality red wine
  • 2 Tbsp. grappa Few gratings nutmeg
  • 2 Tbsp. dry mushrooms soaked in warm water to rehydrate, then squeezed dry
  • 10 x new potatoes quartered
  • 1 lb sweet sausage crumbled
  • 2 Tbsp. unsalted butter

Directions

  1. In a Dutch oven, heat the lard over high heat and add in the onion and leeks. Cook over high heat till softened and browned, about 5 min.
  2. Season the Guinea hen pcs with salt and pepper and place in the pot. Sprinkle the meat with the flour and cook till the meat is well browned.
  3. Add in the wine, grappa, and nutmeg and bring to a boil. Reduce to a simmer and cook till the meat is cooked through, about 30 min. Remove the meat from the pot and keep warm.
  4. Add in the mushrooms, potatoes, and sausage and cook for an additional 15 min, then stir in the butter, return the meat to the pan to heat through and serve with the sauce drizzled over.
  5. This recipe yields 4 servings.
