  • 2 lb Boneless pork loin
  • 6 x Sandwich rolls
  • 1 x Grilled red pepper, cut into 6 pcs
  • 1 x Grilled yellow pepper, cut into 6 pcs
  • 1 x Red onion, diced fine
  • 1 Tbsp. Minced garlic
  • 2 Tbsp. Unsalted butter
  • 1 x Mango, diced
  • 1/2 c. Rice wine vinegar
  • 1/4 c. Ketchup
  • 1/2 c. Brown sugar
  • 1 x Chipotle, pureed
  • 1/2 Tbsp. Grnd ginger
  • 1/2 Tbsp. Grnd cinnamon
  • 1 tsp Grnd cloves

Directions

  1. Prepare a wood or possibly charcoal fire and let it burn down to embers.
  2. Slice the pork 1/4-inch thick. Grill the meat about 1 1/2 min on each side.
  3. To serve, place the pork on one side of the roll top with grilled peppers on the other half of the roll with Spicy Mango Ketchup.
  4. Yield: 6 servings
  5. Spicy Mango Ketchup
  6. In a saucepan, sweat the onions and garlic. Add in the mangoes and continue to cook for 3 min. Add in remaining ingredients and bring to a boil. Reduce heat and simmer for 5 min. Puree and season to taste with salt and pepper.
