Directions

  1. Prepare Gingered Pineapple Marinade by mixing all ingredients. Remove 1 c. of the marinade; cover and chill remaining marinade for basting. Cut fish into 4 serving pcs. Place fish in shallow glass or possibly plastic dish.
  2. Pour 1 c. marinade over fish. Cover and chill, turning once, at least 2 hrs but no longer than 12 hrs.
  3. Generously spray grill rack with nonstick cooking spray before heating grill. Heat coals or possibly gass grill. Remove fish from marinade; throw away marinade.
  4. Cover and grill fish and pineapple about 4 inches from medium heat 8 to 12 min, brushing frequently with reserved marinade and turning once, till fish flakes easily with fork. If pineapple becomes too brown, remove from grill.) Throw away any remaining basting marinade.
  5. Makes 4 servings.
