Ingredients
- 1 x eggplant
- 2 stk butter melted
- 3 Tbsp. fresh thyme Salt to taste Freshly-grnd black pepper to taste
Directions
- Slice the eggplant lengthwise (top to bottom) about 3/4" thick. You can leave the skin on. Brush with some of the melted butter and grill approximately 2 min per side over a warm fire.
- In a saute/fry pan, heat the rest of the butter and cook till it begins to turn brown and foam. Remove from the heat and add in the fresh thyme. Add in a healthy pinch of salt and a healthy pinch of pepper.
- Arrange the eggplant on a plate, and spoon some of the warm butter over it. Serve with any red meat.
- Comments: Eggplants are great grilled over an open fire. Here is a simple recipe for a side dish which will go with any red meat. If you have a side burner on your grill, you can make the sauce while the eggplant is cooking.
