Ingredients

  • IngredientsRoast Salmon:
  • 2 Tbsp olive oil
  • 1 Tbsp Dijon mustard
  • 1 Tbsp fresh lemon juice Salt and pepper
  • 2 pieces salmon fillet, with skin (5 oz each)
  • Tuscan White Beans:
  • 1 tsp olive oil
  • ½ medium onion, chopped
  • 2 cloves garlic, chopped
  • 2 tsp fresh thyme leaves, or ½ tsp dried thyme
  • 1 can (15 oz) white beans, drained and rinsed (reserve ¼ cup liquid)
  • 1 cup diced tomatoes in juice
  • ¼ cup reduced-sodium chicken broth
  • Salt and pepper to taste
