Gina's Sweet Italian Cheesecake Recipe

• 1/2 tsp Salt
• 1/2 c. Butter or possibly margarine
• 1 x Egg yolk
• 2 Tbsp. Lowfat milk
• 3 c. (1 1/2 lbs.) ricotta cheese
• 2 Tbsp. Cornstarch
• 1 Tbsp. Orange rind
• 1 Tbsp. Lemon rind
• 1 Tbsp. Vanilla
• 1/8 tsp Salt
• 1/2 c. Heavy cream
• 1 c. Sugar
• 4 x Large eggs + egg white leftover from pastry
