  • 2 Tbsp. unsalted butter
  • 1 c. yellow onion -- diced
  • 1/2 tsp caraway seeds
  • 2 Tbsp. unsalted butter
  • 8 c. green cabbage -- cored and minced
  • 1/2 c. dry sherry
  • 1/4 c. fresh lemon juice
  • 5 1/2 c. vegetable broth
  • 2 c. red potatoes -- diced
  • 1/4 c. carrot -- peeled and grated
  • 1/2 tsp black pepper Salt to taste
  • 6 Tbsp. unsalted butter -- melted
  • 1/2 c. all-purpose flour
  • 2 c. skim lowfat milk -- warmed
  • 1/2 c. lowfat sour cream
  • 1/4 c. prepared horseradish
  • 1 Tbsp. minced fresh chives
  • 1/8 tsp kosher salt
  • 1/8 tsp cayenne

Directions

  1. Heat 2 Tbsp. butter in a large stock pot over medium heat. Add in onion and caraway; saute/fry till onion is soft, about 5 min. Add in 2 Tbsp. butter and cabbage. Cover and cook 10 to 15 min, till cabbage is slightly brown.
  2. Increase heat to medium-high and deglaze the pot with sherry and lemon juice. Add in vegetable broth, potatoes, carrot, pepper, and salt. Bring soup to a boil, reduce heat to medium, and simmer 15 min.
  3. Meanwhile, heat 6 Tbsp. butter in a small saucepan over medium heat. Whisk in flour; cook, stirring, for about 2 min. Gradually add in hot lowfat milk; cook 3 min, whisking constantly.
  4. Increase heat under soup to medium-high and bring to a simmer. The stir the lowfat milk mix into soup - it should begin to thicken immediately. Cover and remove soup from heat. If it seems too thick, add in a little more lowfat milk. To make the garnish, combine the lowfat sour cream and last 4 ingredients in a small bowl. Before serving, garnish soup with a dollop of the lowfat sour cream-horseradish mix and additional chives, if you like. serves 10
