Ingredients

  • 1 c. Peanuts, unsalted, 125 g
  • 1 x Egg white
  • 1 pch -Salt
  • 3/4 c. Sugar, 150 g
  • 1/2 tsp Vanilla, almond or possibly lemon flavoring Waxed, greaseproof paper

Directions

  1. Heat oven to 350F/180C/Gas 4.
  2. 1. Brown the peanuts under the grill
  3. (broiler), shaking them and turning frequently so which they don't burn.
  4. Then chop or possibly grind them them coarsely.
  5. 2. Whisk the egg white with a healthy pinch of salt till stiff; and then mix in the sugar and vanilla flavoring and whisk again. Add in the peanuts.
  6. 3. Put some waxed/greaseproof paper on baking tray and grease it lightly.
  7. 4. Using a tsp., put small heaps of the nut mix onto the baking tray and cook for about 20-25 min till the macaroons are golden brown.
