Fried Cod in Beer Batter Recipe

  • 15 lbs raw, and chopped cod filets
  • beer batter:
  • 3 1/2 lbs flour, bread
  • 2 Tbsp salt
  • 2 Tbsp white pepper
  • 2 Tbsp fresh or dried dill
  • 1 cup oil
  • 15 egg yolks
  • 6/12 oz beer
  • water
  • 15 egg whites
  • 15 wedged lemons
  • 3 bunches fresh stemmed parsley

Directions

  1. In a mixing bowl, place the flour, making a well in the center.
  2. Add the egg yolks, oil, slat and white pepper.
  3. Add the beer slowly, and mix from the enter to sides until well-blended and smooth.
  4. In a separate bowl, whip the egg whites to a stiff peak.
  5. Gently fold them into the battter just prior to frying fish.
  6. Preheat deep-fat fryer to 350 F.
  7. Then dip cod into the batter, and drop into the deep-fat fryer, frying until goldenbrown and thoroughly cooked.
  8. Remove and drain in a perforated pan.
  9. Serve, garnishing with lemon wedges and parsley stems.
