  • 10 c. Zucchini -- grnd
  • 1 Tbsp. Tumeric
  • 4 c. Onions -- grnd
  • 1 Tbsp. Cornstarch
  • 5 Tbsp. Salt
  • 1/2 tsp Pepper
  • 2 1/4 c. Vinegar -- white
  • 2 tsp Celery seeds
  • 4 1/2 c. Sugar
  • 1 x Pepper, green -- minced
  • 1 Tbsp. Nutmeg
  • 1 x Pepper, red -- minced
  • 1 Tbsp. Mustard -- dry

Directions

  1. Put zucchini, onions and salt in bowl and let stand overnight. Drain and rinse in cool water. Drain again. Put in a large kettle with remaining ingredients. Bring to a boil. Simmer for 30 min. Uncovered stirring occasionally. Pour into 6-8 sterile pint jars. Seal and process for 15 min in a boiling water bath.
