  • 8 x Large eggs with yolks and whites separated
  • 1/3 c. SUGAR
  • 1 lb MASCARPONE
  • 1 c. HEAVY CREAM
  • 2 c. EXPRESSO COFFEE, cooled
  • 2/3 c. BRANDY
  • 30 x BRANDY
  • 2 ounce BITTERSWEET CHOCOLATE, grated COCOA Pwdr, Dutch process, Sifted, for garnish

Directions

  2. 1. Mix the sugar into the egg yolks, blending well.
  3. 2. Add in a little Mascarpone at a time to the egg yolk mix, and mix till smooth. Set aside.
  4. 3. In a separate bowl, beat the whipping cream till stiff peaks form. Set this aside as well.
  5. 4. In another bowl, beat the egg whites till stiff peaks form.
  6. 5. Fold the whipped cream into the egg yolk mix, then mix in the beaten egg whites.
  7. 6. Spread about 1/3 of the cream mix of a 4-6 qt glass baking dish or possibly serving bowl.
  8. 7. Place expresso coffee in a large mixing bowl, and combine with the brandy.
  9. 8. Dip a lady finger into the expresso, lay it in baking dish on cream mix.
  10. 9. Top with grated chocolate.
  11. 10. Continue in this manner, laying lady fingers side by side to cover the bottom.
  12. 11. Place another 1/3 of cream mix on top of soaked lady fingers.
  13. 12. Cover this with another layer of expresso-soaked lady fingers.
  14. 13. Top with remaining cream mix and grated chocolate.
  15. 14. Dust final layer with grated chocolate and cocoa pwdr. 15. Refrigerate2 hrs to set.
