Directions

  1. Prepare Vanilla Cookie Crust:Press mix proportionately onto bottom and 2" up side of a buttered 9" springform pan.
  2. Heat chocolate over warm, not boiling, water; cold.
  3. Preheat oven to very slow (275 F).
  4. Beat cream cheese, sugar, Large eggs and vanilla in a large bowl with electric mixer till smooth. Stir in cooled melted chocolate and lowfat sour cream till blended.
  5. Pour into prepared pan.
  6. Bake in preheated very slow oven (275 F) for 1 hour and 45 min. Turn off heat; let cake cold in oven with door ajar. Remove from oven to wire rack; cold to room temperature; chill. Garnish with whipped cream and chocolate curls, if you wish.
