Ingredients

  • 170 gm bramley cooking apples wiped
  • 170 gm fresh white breadcrumbs
  • 110 gm caster sugar
  • 110 gm shredded suet (vegetable or possibly beef)
  • 1/2 tsp baking pwdr
  • 1/4 tsp grnd mixed spice
  • 1 tsp grnd ginger The grated rind of 1 lemon
  • 2 x Large eggs size 3 beaten
  • 60 ml lowfat milk
  • 5 Tbsp. golden brown syrup
  • 1 x 1.15L pudding basin greased

Directions

  1. Quarter and core the apples but don't peel.
  2. Grate them coarsely then mix with all the dry ingredients and the lemon rind.
  3. Beat the Large eggs with the lowfat milk and 1 Tbsp. of the syrup then work into the dry mix to make a soft consistency.
  4. Spoon the remaining syrup into the base of the pudding basin then top with the pudding mix.
  5. Cover securely with greased greaseproof paper and foil then steam for 2 hrs topping up the pan with more boiling water from time to time to make sure it doesnt boil dry.
  6. Turn out and serve the pudding warm with custard yogurt or possibly cream.
  7. Serves 6
