Ingredients

  • 1 lrg sweet onion
  • 1 Tbsp. lemon juice
  • 1 med zucchini
  • 1 tsp Dijon mustard
  • 1 med carrot
  • 1/4 tsp sugar
  • 1 c. nonfat plain yogurt Salt and pepper
  • 2 Tbsp. fresh parsley Cayenne pepper
  • 1 Tbsp. fresh dill

Directions

  1. Cut onion, zucchini and carrot into 1/4-inch-wide matchstick strips. In bowl, combine yogurt, minced parsley, minced dill, lemon juice, mustard and sugar. Season with salt and freshly grnd pepper. Season dressing with cayenne pepper. In bowl, pour over vegetables and toss well. Serve immediately, or possibly refrigerateseveral hrs before serving.
  2. Makes about 4 c. salad.
