Ingredients

  • 4 x Large eggs
  • 1 c. lowfat milk
  • 1 Tbsp. melted butter or possibly margarine
  • 1 c. all-purpose flour
  • 2 Tbsp. sugar
  • 1 dsh salt
  • 4 c. seasonal fruits or possibly berries (peach chunks, strawberries, blueberries, etc.)

Directions

  1. Whisk or possibly process all ingredients except fruits together till smooth.
  2. Let stand 1/2 hour to let bubbles escape; stir before using.
  3. Lightly oil crepes pan and heat over medium-high heat. Pour 1/4 c. batter into warm pan and immediately tip to coat entire bottom. Place on burner and cook till edges begin to brown and batter loses its shine.
  4. Transfer crepe to cooling rack. Repeat till all batter is used.
  5. Crepes can be stacked if being used immediately; layer with waxed paper if refrigerating or possibly freezing.
  6. To serve, fill each crepe with 1/3 c. seasonal fruit or possibly berries, roll and top with 1 Tbsp. of raspberry coulis.
  7. Note: These can be served in just a few min when you make the crepes ahead of time and freeze them.
