  1. In a bowl combine cornmeal, cheddar, onion, pepper, salt, and cayenne.
  2. Stir in boiling water and mix thoroughly.
  3. Drop 6 small ice cream scoops of batter into oil and fry for 2 to 3 minutes or until golden brown.
  4. Transfer fritters to paper towels or perforated pan to drain.
  5. Serve with hot sauce.
