Corn Meal Batter Fried Catfish On Pickled Cucumbers With Recipe

Ingredients

  • 1 lb Catfish fillet, cut into four even pcs Salt and freshly grnd pepper to taste
  • 1 c. Flour
  • 1 x Egg beaten lightly
  • 1 c. Cornmeal
  • 1 quart Peanut or possibly canola oil for frying

Directions

  1. In a four qt pot heat the oil to 325 degrees Fahrenheit. Season both sides of the fish with salt and pepper. Dredge the fillets in the flour. Coat each piece proportionately and shake off any excess flour. Dip the fillets into the egg and then dredge in the cornmeal. Fry the catfish in the oil for three min. Do this in two batches. Drain the catfish on paper towels and serve while still warm on a pile of the pickled vegetables.
  2. Yield: Serves 4
