Ingredients

  • 1 1/2 c. Flour
  • 4 1/2 tsp Baking pwdr
  • 1/3 tsp Salt
  • 1 1/2 c. Fine yellow corn meal
  • 2 x Large eggs, beaten
  • 1/4 c. Honey (scant)
  • 1 1/2 c. Plain soy lowfat milk
  • 8 Tbsp. Pareve margarine, melted

Directions

  1. Strauss
  2. Preheat oven to 375 . Mix together flour, baking pwdr, & salt in a large bowl, and add in cornmeal. In another bowl, mix Large eggs, honey, lowfat milk & margarine.
  3. Combine flour & egg mixtures, and beat till smooth, but do not overmix.
  4. Bake in a well-greased muffin tin for 20-25 min.
  5. Variation: for a sweeter muffin, increase honey to 1/2 c..
