  • 1 pound self-rising flour
  • 1 level teaspoon cinnamon
  • 1 1/2 lbs. mixed fruit
  • 6 ounce brown sugar
  • 4 ounce butter
  • 2 ounce cherries
  • 2 ounce candy peel
  • 1/2 pt. cool tea, strained

Directions

  1. 1. Put the fruit and sugar into a bowl and pour in the strained tea. Leave overnight.2. Next day, rub the butter into the flour till it is like bread crumbs. Stir in the fruit, tea, sugar mix also add cherries, candy peel and mix thoroughly. The mix should be fairly wet, but not sloppy. It may be necessary to add in a little drop of lowfat milk to get the right consistency. Put into a well greased 8 inch tin. Bake at 350 degrees for 1 to 1 1/2 hrs till cooked through. When done, leave tin on a wire tray and leave till cold. Then turn out.
