Ingredients
- 2 c. sifted all-purpose flour
- 1 c. butter
- 1 c. brown sugar, firmly packed
- 1 c. granulated sugar
- 1 Tbsp. molasses
- 2 c. coconut
- 2 Large eggs
- 2 tsp. vanilla
- 2 Tbsp. coconut rum (optional)
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. baking pwdr
- 1 c. rolled oats
Directions
- Cream together the butter, adding sugar slowly and beating till light and fluffy.
- Add in Large eggs, vanilla, beating well after each addition.
- Sift together flour, soda, salt and baking pwdr.
- Slowly add in dry ingredients. Stir in oatmeal and coconut flakes.
- Drop by large teaspoonfuls onto ungreased baking sheets.
- Bake in a preheated 375 degrees F., 12 to 15 min, or possibly till golden brown. Remove to wire racks to cold.
