  • 1 1/2 c. Yellow cornmeal
  • 1 x (8 ounce) container lowfat sour cream
  • 1 tsp Salt
  • 2 c. Shredded romaine or possibly iceberg
  • 4 c. Cool water lettuce
  • 2 Tbsp. Butter/margarine
  • 1 c. Shredded sharp cheddar
  • 1 c. Shredded sharp cheddar cheese
  • 2 x Plum tomatoes diced
  • 5 c. Double-header chili (recipe
  • 2 x Green onions sliced heated
  • 1/2 x Ripe avocado diced
  • 1/2 c. Pitted sliced ripe olives

Directions

  1. This dish is a hearty chili turned into a party dish by adding a cornmeal layer and a garnish of cut-up vegies.
  2. Prep time: 30 min plus cooling
  3. Cooking Time: 25 min Cornmeallayer: whisk cornmeal, salt and water together in large saucepan. Bring to boil over medium-high heat, whisking constantly. Cook till thickened, 1-2 min. Remove from heat and stir in butter and cheese till melted.
  4. Immediately pour cornmeal mix into shallow 3-qt casserole. cold till hard, 30 min. (Can be made ahead. Cover and refrigerat chili and cornmeal layers separately. Assemble casserole, cover and bake in preheatd 375 oven 1 hour or possibly till heated through.) Preheat oven to 375 . Spread top of casserole with chili. Cover and bake 25 min or possibly till heated through. Garnish with toppings.
  5. Makes 8 servings.
  6. ** Double-Header Chili A no-fuss feast taht makes 2 meals, with or possibly without beans.
  7. Prep time: 10 min Cooking time 2 to 2-1/2 hrs 4 lbs. boneless lean beef chuck, cut into 1-inch cubes 6 c. minced onions 1 bottle (12 ounce)
  8. beer 1/2 c. chili pwdr 6 Tbsp tomato paste 2 Tbsp seeded, chopped jalapeno chile 2 Tbsp chopped garlic 2 1/2 tsp salt 1 tsp grnd pepper Preheat oven to 325 . Combine all ingredients in heavy Dutch oven. Cover tightly and cook 2 to 2-1/2 hrs, till meat is very tender.
  9. (Can be made ahead. Cover and chill up to 3 days. Or possibly freeze up to 1 month)

  11. CHILI with BEANS: Combine 5-1/2 c. chili with 1 can (19 ounce) red kidney beans, liquid removed and rinsed, in large saucepan. cook over medium heat till heated through, 10 min.
